Both are pastry masters I love dearly and I’ve been a loyal fan ever since I tasted their magical creations for the first time last year.
I’m pretty much obsessed with Pierre Hermé’s macarons but when in Tokyo, Hidemi Sugino takes the cake when it comes to light and airy mousse cakes!

Cassis lovers out there, you have to try the oh-so-berry Sous Bois (above), a classic blackcurrant mousse cake with kirsch bavarois in the middle!
And for something a little more unique, we had the great looking Amethyste (below). The staff told us it’s a “butter cake” but of course, it can’t be that simple! After all, there’s 8 different layers of sponge, mousse and jelly! I couldn’t really pinpoint exactly all the ingredients in each layer.. All I know is that there might be buttercream, raspberry, applesauce and something minty in it, haha.
Now, to the highlight!
If you can only have one cake (noooooooo!) at Hidemi Sugino, it MUST be the signature Ambroisie ok??
This is the chocolate cake that will make you feel that all other chocolate mousse cakes you’ve ever eaten are crap, haha.
Pure perfection in every single bite, sigh~
